Start of Day
  • Bring Out Green Garbage Bins to the Front

  • Empty Recycling Bin

  • Clean Customer / Staff Washrooms

  • Fill / Wipe Oil Bottles

  • Fill / Wipe Salt Shakers

  • Fill Coarse Salt Bucket

  • Fill / Wipe Pepper Mills

  • Fill Rosemary

  • Stock Olive Oil

  • Check / Fill Soaps and Detergents

  • Clear Old Bread From Top Tray

  • Toasts Bread (According To Reservations)

  • Wrap Fish Trays

  • Fill Fish Tray Water Bottles

  • Clear Dish pit

  • Clear Empty Boxes

  • Run Cutlery and Clean Bucket

  • Polish Cutlery & Glasses

  • Clear Glass and China Section​

Close Bread Section
  • Clean Bread Crumbs from Top of Table

  • Wash Bread Knife, Cutting Board, Tongs & Replace when Clean

  • Make Sure The Salt, Oil, & Rosemary is Refilled

  • Put All Bread in the Bread Container; FIRST IN, FIRST OUT.

Close Dishpit Section
  • Completely Clear Dishpit Area of any Dirty Glassware, Dishes, Pots, & Utensils. Everything should be in its proper place.

  • Scrub, Sanitize Dishpit Surfaces, Sprayer, Under Trap, & Machines

  • Clean out all Dishwasher & Sink Traps

  • Turn Dishwasher & Glasswasher off

  • Cutlery Bucket Should Be Clean & Must Have Pre Soak Detergent
